Eggless Whole Wheat Jaggery Cake | Eggless Gud Cake – a lazy tea time cake made with atta (whole wheat) and jaggery.
Slightly flavoured with cinnamon, this cake is lightly sweetened and is excellent for snacking or breakfast.

Eggless whole wheat jaggery cake is a healthier take on the classic eggless pound cake. This cake is moist, light and a perfect companion for your evening tea!

I am not using regular flour or sugar. Instead, we have healthier calories from whole wheat flour and jaggery. You can either use butter or oil in this cake.

Eggless Whole Wheat Jaggery Cake Recipe is a basic cake which is made in a 100 % healthy way with whole wheat flour and jaggery replacing the usual unhealthy maida/all purpose flour & white sugar.

I love cakes which can be made with basic pantry ingredients, and this cake is just that.

To make this, you need atta (whole wheat flour), yoghurt, milk and jaggery. Simple ingredients which you most likely will already have in your pantry.

I also flavour the cake with some cinnamon which goes well. You can even add some cardamom powder to it.

For the crunch, there are some walnuts, but you can add any nuts of your choice or even skip the nuts if you don’t care for them.

This atta jaggery cake is very lightly sweetened so if you prefer a sweeter cake. I suggest increasing the jaggery in the recipe.

Although I have used 1 cup of jaggery powder here, which measured 130 grams after sifting. I like to sift the jaggery powder first to get rid of all the larger particles present in the powder.

What makes the Eggless Gud Cake so amazing?

You can make this cake batter in less than 10 minutes. This cake is fantastic because it is made with diet-friendly sweetener, which has a lot of goodness in it.

Replacement or altering the ingredients

Can you use ghee or butter for this cake? Maybe, I have only tested this recipe with oil, makes it moist. So, I would suggest sticking to the oil. Use any flavourless oil like canola oil, vegetable oil avocado oil etc.

Can you bake this cake in a round pan? Yes, of course, bake in a seven or 8-inch round pan for maybe around 35 minutes.

How to store this cake? First of all, this cake is very soft, so let it cool completely and then slice it with a sharp knife. Then keep it an airtight container. It should be okay at room temperature for three days.

However, if it’s hot where you live, then it’s better to refrigerate it.

Substitute for jaggery? If you don’t have jaggery, use brown sugar in place. However, 1 cup of brown sugar is 200 grams, so it will be much sweeter if you replace directly with a cup. Best will be to weight the sugar and then return.

Notes:

  • ou can use any cooking oil. But nothing that has a strong aroma. That’ll overpower the cake ingredients
  • Use a knife to level out the cup while measuring the flour. This will help you measure the correct amount of ingredients
  • If you prefer weighing your ingredients, use 171 grams of wheat flour, and 150 grams of jaggery (grated)
