As a kid, i liked coconut biscuits a lot, and these are very commonly sold in any Indian bakeries, primarily in Goa, Karnataka and kerala, as they use more coconut in daily cusine. Adding coconut to any dish like curry or rice give both taste and flavour to the complete dish. And if you are on a diet, then coconut is the best ingredient to add to your daily food as it is rich in vitamins and fibre and keeps you full for a long time.

I wanted to make these coconut biscuits from a long time, but somehow I was not able to make a video, but I never thought these coconut biscuits would be so damn tasty.

The coconut flavor is again one of my favorites. My taste buds go crazy when its a coconut cookie. The cookies were light and absolutely melted in the mouth. Perfect for kids with milk, and adults can enjoy them anytime with a cup of hot tea.

With every bite that you take, that coconutty flavor lingers in your mouth and leaves you craving for more. 

 

I don’t want anything if I have coconut. However, I just added little vanilla, which enhanced the coconut flavor. Again to increase its beauty and give it a crunchy bite, I coated my coconut cookies with some desiccated coconut. But if you feel, you can omit the coating part.

And not to mention the heavenly aroma of freshly baked cookies that will fill your kitchen and home with a wonderful scent!

When I bake these eggless coconut biscuits, my kitchen was filled with a pleasant aroma of coconut, and my house was smelling like a bakery, and yes theses biscuits tasted no less than the store-bought biscuits.

Everyday equations of an Indian kitchen does not match with baking. Though I keep my gaga song of blissful baking alive, and I am aware of the fact that we Indians are occasional bakers. Ingredients
  

  • 1 cup Flour/Atta wholewheat
  • 1/2 cup Sugar
  • 1/4 cup Dedicated Coconut
  • 1/8 tsp salt
  • 1/4 cup ghee
  • 1 tsp vanilla essence
  • 1/4 tsp baking soda
  • 1/4 cup milk

Instructions
 

  • In a bowl add flour/atta
  • Next add desiccated coconut, sugar and slat
  • Add Ghee and vanilla essence
  • Now add baking powder
  • Next add milk, little at once to get the dough together
  • Cover the dough and rest for 15 minutes
  • After 15 minutes, make small balls and flatten it slightly
  • Pre heat the oven at 180 degrees
  • Bake for 30 minutes or till it turns completely brown

    Besides nutrition, it’s easy to store in the refrigerator for months without spoiling and comes in handy.

     

    Crunchy and chewy, these cookies melt in your mouth and gives you an experience that no other cookie can! Making coconut cookies at home is not that difficult as it sounds, and can be easily made with a little effort. The traditional method of preparing Coconut Cookies.

     

    Furthermore, some important tips and suggestions with variations to make a perfect coconut cookies recipe. Firstly, in this recipe, i have used wheat flour to make it a healthy biscuit recipe. But from a taste-wise, it tastes great when made with plain flour or maida atta. Secondly, i have baked these cookies in a convection microwave. You can make these in a pressure cooker or an OTG. While you can bake in oven or otg at 180-degree Celcius for 15 minutes, but if you are using the cooker, use old and not a new pressure cooker. Potentially you may spoil the cooker and hence use accordingly. Lastly, do not use freshly grated coconut for this recipe and use desiccated coconut as directed. It should be dry and moisture-free while mixing it with the cookie batter.

     

    I am not a huge fan of baking cookies at home, and i like to buy it from local bakeries. But i always get a lot of requests to make some homemade baked biscuits or cookies recipes. Particularly i get for more of eggless recipes as most of the store-bought do contain egg in it. Traditionally egg yolks are added to cake or cookie batter to make it moist, creamy and also to hold the shape. the same can be achieved by adding ingredients like baking soda and baking powder. To be honest, i feel these artificial agents may not be the same match to egg yolks. But still a great alternative to making an eggless coconut cookies recipe.

     

    Instead of making biscuits shapes initially, you can first make a simple dough, refrigerate it and then shape it into cookies after 30 minutes of chilling.
    Whole sugar will add much crunch to it as it doesn’t melt completely even after baking. However, you can powder it before using it.
    Don’t think that you can use salted butter and skip the extra salt added. Butter has high salt content than the pinch, which we have added.

    4. Now add 1/4 tsp salt, ghee and baking soda

    5. Next add vanilla essence and combine everything well

     

     

     

    6. Next add milk, little at once to make a stiff dogh

    8. After 10 minutes, make small ball and flatten a little

    9. Pre heated oven @ 180 degrees Celsius and bake for 30 minutes or till it turns complete brown.

    10. Allow it to cool for 10 minutes on the tray

     

     

     

    11. After 10 minutes, transfer it on wire rack and allow it to cool down completely.

    notes:

    • you can use brown sugar in place of white sugar for a more chewy texture.
    • You can make coconut cookies and also be made different version by adding some chocolate chips to prepare chocolate coconut cookies.
    • I have used wheat flour as a healthy alternative to maida.
    • Coconut cookies recipe taste good when prepared with good quality desiccated coconut.
