Molasses Pound Cake

I wanted to bake molasses Pound cake waswlong time pending in my to do list of baking new cakes but I was not able to get molasses in the local market and then I biubou it from Amazon India. Molasses gives the cake jaggeey like taste. I never used jaggery in any of my cakes but I felt jaggeej would also give the taste if used. But you cannot simply replace molasses in this recipe. I will make a jaggery cake soon and post one.
Let’s come back to the molasses Pound cake. This cake came out really soft and melted in my mouth. I pretty scared of baking a cake with molasses first but I definitely wanted to give it a try and to my surprise in came out really good. I would say this would be really good if you want to use your favorite icing on top of it. I loved this recipe because this again have very few ingredients but the main ingredient was molasses.

2 cups of flour /maida
1/2 cup butter
1/2 cup sugar
1/2 cup milk
3 eggs
1/2 teaspoon of baking soda
Pinch of salt
1/2 cup of molasses

These are simple ingredients we need to make the moist, melt in mouth molasses pound cake

  1. Take butter and sugar in a mixing bowl and beat till sugar almost dissolves
  2. Add 1 egg at a time and beat for about 1 minute each time you add the egg
  3. Add in the vanilla essence along with the last egg
  4. Next add 1/2 cup of molasses first and mix well
  5. Add the salt, baking soda and flour and mix well
  6. Lastly add milk and mix well
  7. Pour the batter in a greased and lined baking pan 
  8. Bake @ pre heated 180 degrees Celsius for about 30-35 minutes or untill the skewer comes out clean
