4. The Cook: Pour in water (2.5 cups), and bring the mixture to a boil. If you’re using a pressure cooker, cover and cook for about 4-5 whistles on medium heat. If using a pot, cover and simmer until the grains are fully cooked, stirring occasionally and adding more water if needed.
5. The Tadka (Tempering): In a small pan, heat ghee. Add mustard seeds, cumin seeds, and crushed garlic, letting them splutter. Add red chilli powder and immediately pour this tadka over the cooked Khichdi. This final step is what truly transforms the dish, infusing it with a smoky, aromatic flavor that’s irresistible.
