Soft & Spongy Dahi Vada – Perfect Iftar Snack! ✨

Want super soft & airy Dahi Vada that melts in your mouth? Try this foolproof recipe—perfect for Ramzan Iftar, Holi, or any special occasion!

✅ Secret Trick for Fluffy Vadas
✅ Perfectly Balanced Sweet, Spicy & Tangy Flavors
✅ Easy & Delicious Street-Style Chaat at Home

📌 Ingredients:

🔹 For Vadas:
	•	½ cup urad dal & ¼ cup moong dal (soaked for 6 hours)
	•	¼ teaspoon hing, ½ teaspoon salt, 1 finely chopped green chili, 1 inch ginger
	•	Oil for frying

🔹 For Soaking Water:
	•	½ liter warm water
	•	¼ teaspoon salt & ¼ teaspoon hing

🔹 For Curd Mix:
	•	1.5 cups curd (whisked with ¼ teaspoon salt & 2 tablespoons sugar)

🔹 For Green Chutney:
	•	½ cup pudina (mint), ¼ cup coriander, 2 green chilies, ½ teaspoon jeera
	•	2 tablespoons peanut powder, ¼ teaspoon salt, 2 tablespoons water

🔹 For Garnishing:
	•	Khatti-meethi tamarind chutney
	•	Red chili powder, chaat masala
	•	Sev & fresh anardana (pomegranate seeds)

📌 How to Make:

1️⃣ Soak & Grind Dal: Wash & soak urad + moong dal for 6 hours. Grind separately with little water to make smooth pastes.
2️⃣ Whisk for Fluffiness: Mix pastes & whisk 6-7 mins until light & airy. Drop batter in water—if it floats, it’s ready!
3️⃣ Fry the Vadas: Heat oil, drop batter & fry on medium-low heat until golden brown.
4️⃣ Soak for Softness: Dip fried vadas in warm salt-hing water for 30 mins—this makes them extra soft!
5️⃣ Prepare Curd Mix & Chutney: Blend curd with salt & sugar. Blend mint, coriander, chilies, jeera, peanuts, & salt for green chutney.
6️⃣ Assemble: Squeeze vadas, place on a plate, pour chilled curd, drizzle chutneys, sprinkle spices, sev & anardana.
7️⃣ Serve & Enjoy! Chilled or fresh—it’s delicious both ways! 😍

💡 TIP: Always soak vadas in hing water for that soft, melt-in-mouth texture!
