✅ Secret Trick for Fluffy Vadas
✅ Perfectly Balanced Sweet, Spicy & Tangy Flavors
✅ Easy & Delicious Street-Style Chaat at Home

📌 Ingredients:

🔹 For Vadas:
	•	½ cup urad dal & ¼ cup moong dal (soaked for 6 hours)
	•	¼ teaspoon hing, ½ teaspoon salt, 1 finely chopped green chili, 1 inch ginger
	•	Oil for frying

🔹 For Soaking Water:
	•	½ liter warm water
	•	¼ teaspoon salt & ¼ teaspoon hing

🔹 For Curd Mix:
	•	1.5 cups curd (whisked with ¼ teaspoon salt & 2 tablespoons sugar)

🔹 For Green Chutney:
	•	½ cup pudina (mint), ¼ cup coriander, 2 green chilies, ½ teaspoon jeera
	•	2 tablespoons peanut powder, ¼ teaspoon salt, 2 tablespoons water

🔹 For Garnishing:
	•	Khatti-meethi tamarind chutney
	•	Red chili powder, chaat masala
	•	Sev & fresh anardana (pomegranate seeds)

📌 How to Make:

1️⃣ Soak & Grind Dal: Wash & soak urad + moong dal for 6 hours. Grind separately with little water to make smooth pastes.
2️⃣ Whisk for Fluffiness: Mix pastes & whisk 6-7 mins until light & airy. Drop batter in water—if it floats, it’s ready!
3️⃣ Fry the Vadas: Heat oil, drop batter & fry on medium-low heat until golden brown.
4️⃣ Soak for Softness: Dip fried vadas in warm salt-hing water for 30 mins—this makes them extra soft!
5️⃣ Prepare Curd Mix & Chutney: Blend curd with salt & sugar. Blend mint, coriander, chilies, jeera, peanuts, & salt for green chutney.
6️⃣ Assemble: Squeeze vadas, place on a plate, pour chilled curd, drizzle chutneys, sprinkle spices, sev & anardana.
7️⃣ Serve & Enjoy! Chilled or fresh—it’s delicious both ways! 😍

🥜 Chopped Pistachios (पिस्ता)

🥄 Instructions:
1️⃣ Rabdi: Boil milk, add saffron, condensed milk & sugar, stir till thick. Let cool.
2️⃣ Bread Pine Wheels: Cut bread edges, roll flat, stick slices together, roll tightly & cut.
3️⃣ Sugar Syrup: Boil water & sugar, add rose petals, let cool.
4️⃣ Fry & Soak: Deep fry pine wheels until golden & dip in syrup for a few seconds.

🥜 Ingredients:
✔️ 4-5 green chilies (slit)
✔️ 1 tablespoon peanuts
✔️ ½ tablespoon dry coconut
✔️ 8-10 cashews
✔️ ½ tablespoon sesame seeds
✔️ ½ teaspoon fenugreek seeds
✔️ 2 tablespoons oil
✔️ 1 onion (chopped)
✔️ 2 tablespoons barista (fried onions)
✔️ 2.5 cups water
✔️ 1 teaspoon mustard seeds
✔️ 1 teaspoon nigella seeds
✔️ 1 teaspoon cumin seeds
✔️ 8-10 curry leaves
✔️ 1 tablespoon ginger-garlic paste
✔️ 1 teaspoon coriander powder
✔️ 1 teaspoon red chili powder
✔️ ¼ teaspoon turmeric powder
✔️ Salt to taste
✔️ ¼ cup tamarind pulp
✔️ Fresh coriander (for garnish)

👩‍🍳 Instructions:
1️⃣ Dry roast peanuts, coconut, cashews, sesame, and fenugreek seeds until fragrant.
2️⃣ Sauté slit green chilies in oil until lightly charred & set aside.
3️⃣ Blend roasted ingredients with fried onions & a little water into a smooth paste.
4️⃣ In the same pan, heat mustard, nigella, cumin, and curry leaves. Add ginger-garlic paste.
5️⃣ Add dry spices & cook for a minute. Mix in the ground masala.
6️⃣ Pour ½ cup water & cook for 5 minutes. Then add chilies & remaining water. Simmer for 10 mins.
7️⃣ Stir in tamarind pulp & garnish with coriander. Done! 😋
