Gatte ki Sabzi is my husband’s favorite. He calls it as beasn ki Sabzi rather than gatte ki Sabzi. I must admit that the Recipe is simple with lot of flavor. Gatte ki Sabzi is basically a Rajasthani dish but it called by different names within india. And you will find different way of cooking this curry in parts of India. I have created my own recipe which doesn’t have too much of spice but has lot of flavor of coriander, garam masala.
Gatte is Sabzi is prepared in two stages, in the first stage, dumplings of besan or chickpeas flour are immersed in bolliBo water and is boiled for about 5 minutes on high flame or till the dumplings starts floating on top. The second stage is the curry, I make the curry using cream, curd and besan. Where as in many parts of india it is made using only besan and curd or sometimes only curd. I use cream because I feel adding cream first will not let you curd split.

I hope you have seen I added very few masalas but trust you cannot resist this curry and you would love to make this recipe very often. Let me now list down the ingredients for the gatte ki Sabzi
Ingredients to make gatte
1/2 cup besan or chickpeas flour
1/2 cup curd or dahi
1 tablespoon ajwain or carom seeds
1 tablespoon sunflower oil
Chopped Coriander
1/2 teaspoon ginger garlic paste
1/4 tsp garam masala
Salt as per your taste
1/4 teaspoon turmeric
1/2 teaspoon red chilli powder
Instructions to make gatte
- Add flour, turmeric powder, garam masala powder, ginger garlic paste, coriander, oil, and other ingredients mentioned above and mix well
- Now asd curd to dry ingredients, make sure you adding 1 tablespoon of curd at a time and make a dough
- Apply little oil palms and take small portion of dough and roll with hands and make sausages
- Mean while heat water in pan and add the dumplings in the bolling water
- Let the dumplings cook for five minutes or till it starts floating on top
- Take out gattas from water and cut into bite size pieces
- Add ghee to a pan and fry the gattas till light brown
1/2 teaspoon carom seeds or ajwain
2 tablespoon of oil
Chopped Coriander
1/2 teaspoon red chilli powder
1/4 teaspoon turmeric powder
Salt as per your taste
Water of boiled gattas
Step by step instructions to make the sabzi
- Add beasn and dahi in a bowl and whisk well
- Next add the water of boiled gattas, to make a thin consistency batter
- Heat oil in a frying pan
- Now add carom seeds, Cumin seeds and fry
- Next add all the masalas
- Add the cream to the masalas and mix well
- Add the besan and curd mixture, stirring the curry
- Boil for about 5 minutes and the add the gattas
- Let the gattas cook for 5 minutes in the gravy
- Finally add the chopped Coriander
- Gatte ki Sabzi is ready to be served
