	โ€ข	ยฝ cup urad dal & ยผ cup moong dal (soaked for 6 hours)
	โ€ข	ยผ teaspoon hing, ยฝ teaspoon salt, 1 finely chopped green chili, 1 inch ginger
	โ€ข	Oil for frying

๐Ÿ”น For Soaking Water:
	โ€ข	ยฝ liter warm water
	โ€ข	ยผ teaspoon salt & ยผ teaspoon hing

๐Ÿ”น For Curd Mix:
	โ€ข	1.5 cups curd (whisked with ยผ teaspoon salt & 2 tablespoons sugar)

๐Ÿ”น For Green Chutney:
	โ€ข	ยฝ cup pudina (mint), ยผ cup coriander, 2 green chilies, ยฝ teaspoon jeera
	โ€ข	2 tablespoons peanut powder, ยผ teaspoon salt, 2 tablespoons water

๐Ÿ”น For Garnishing:
	โ€ข	Khatti-meethi tamarind chutney
	โ€ข	Red chili powder, chaat masala
	โ€ข	Sev & fresh anardana (pomegranate seeds)

๐Ÿ“Œ How to Make:

1๏ธโƒฃ Soak & Grind Dal: Wash & soak urad + moong dal for 6 hours. Grind separately with little water to make smooth pastes.
2๏ธโƒฃ Whisk for Fluffiness: Mix pastes & whisk 6-7 mins until light & airy. Drop batter in waterโ€”if it floats, itโ€™s ready!
3๏ธโƒฃ Fry the Vadas: Heat oil, drop batter & fry on medium-low heat until golden brown.
4๏ธโƒฃ Soak for Softness: Dip fried vadas in warm salt-hing water for 30 minsโ€”this makes them extra soft!
5๏ธโƒฃ Prepare Curd Mix & Chutney: Blend curd with salt & sugar. Blend mint, coriander, chilies, jeera, peanuts, & salt for green chutney.
6๏ธโƒฃ Assemble: Squeeze vadas, place on a plate, pour chilled curd, drizzle chutneys, sprinkle spices, sev & anardana.
7๏ธโƒฃ Serve & Enjoy! Chilled or freshโ€”itโ€™s delicious both ways! ๐Ÿ˜

๐Ÿฅœ Ingredients:
โœ”๏ธ 4-5 green chilies (slit)
โœ”๏ธ 1 tablespoon peanuts
โœ”๏ธ ยฝ tablespoon dry coconut
โœ”๏ธ 8-10 cashews
โœ”๏ธ ยฝ tablespoon sesame seeds
โœ”๏ธ ยฝ teaspoon fenugreek seeds
โœ”๏ธ 2 tablespoons oil
โœ”๏ธ 1 onion (chopped)
โœ”๏ธ 2 tablespoons barista (fried onions)
โœ”๏ธ 2.5 cups water
โœ”๏ธ 1 teaspoon mustard seeds
โœ”๏ธ 1 teaspoon nigella seeds
โœ”๏ธ 1 teaspoon cumin seeds
โœ”๏ธ 8-10 curry leaves
โœ”๏ธ 1 tablespoon ginger-garlic paste
โœ”๏ธ 1 teaspoon coriander powder
โœ”๏ธ 1 teaspoon red chili powder
โœ”๏ธ ยผ teaspoon turmeric powder
โœ”๏ธ Salt to taste
โœ”๏ธ ยผ cup tamarind pulp
โœ”๏ธ Fresh coriander (for garnish)

๐Ÿ‘ฉโ€๐Ÿณ Instructions:
1๏ธโƒฃ Dry roast peanuts, coconut, cashews, sesame, and fenugreek seeds until fragrant.
2๏ธโƒฃ Sautรฉ slit green chilies in oil until lightly charred & set aside.
3๏ธโƒฃ Blend roasted ingredients with fried onions & a little water into a smooth paste.
4๏ธโƒฃ In the same pan, heat mustard, nigella, cumin, and curry leaves. Add ginger-garlic paste.
5๏ธโƒฃ Add dry spices & cook for a minute. Mix in the ground masala.
6๏ธโƒฃ Pour ยฝ cup water & cook for 5 minutes. Then add chilies & remaining water. Simmer for 10 mins.
7๏ธโƒฃ Stir in tamarind pulp & garnish with coriander. Done! ๐Ÿ˜‹
