It is been a while since I posted to, I am gearing up for some amazing and super easy recipes for you all in coming days. And what better start it can be than Rasmalai Biscuits Diwali Special.

Significance of Diwali:

We all know Diwali is celebrated for 2 reasons

  1. The villagers lit candles or Diya’s when lord Rama returned to Ayodhya with wife Sita and brother Laxmana after winning the batter le with Ravana and completing his 14 years of vanvasa
  2. When Lord Krishna battled with Narkasur, one of the demon and won the fight

the same way I am returning to my passion of baking. And wanted to start with some easy Rasmalai biscuits to enhance the festive moods

Rasmalai: Is one of the most loved dessert or sweets in India. During festivals this is considered as one of the most sold sweets. The name rasmalai is the combination of 2 parts Ras+Malai, Ras is nothing but the milk and malai is the small Chenna or Paneer/ Cottage cheese balls floating in milk (ras). Rasmalai can also be made at home

How to make Rasmalai at home?

To make Rasmalai at home take 1 liter of milk, the creamier the milk the better the rasmalai will be. First you need to boil milk as usual, switch off the gas and add 1 tbsp vinegar and stir the milk. Milk will start curdling, take a muslin cloth and transfer the curdled milk, stain the excess water and rest the curdled milk for at least 10 minutes to drain out all the water. This is process of making Chenna or Paneer/cottage cheese. You can refer to recipe to make Chenna or paneer.

I used Curd to make chenna in the video but you can use anything to curdle the milk completely. After 10 minutes remove chenna from muslin cloth on to a plate and rub, till the time it becomes soft. Now make small balls and boil in the water. Once the chenna or paneer is completely boiled it will start floating.

The second sept is to make the ras, for that you just need to make boil the milk, add sugar, few strands of saffron.

Final step, add the chenna/ paneer balls to the sweet milk and put it in the fridge to cool. Rasmalai is severed chilled. You can top it up with some sliced pistachios as well.

Rasmalai Biscuits:

As I said I wanted to make some sweet or dessert recipe to resume myself to my blogging space therefore I wanted something very easy to make and that can go well with the festive vibes (Diwali).

I will not bore you guys to read more and directly jump to my recipe

Ingredients to make Rasmalai Biscuits/ Rasmalai Cookies

  • 40 grams of ghee
  • 1 tbsp of milk powder
  • 50 grams of powdered sugar
  • 70 grams of maida/all purpose flour
  • 1/4 tsp of baking powder
  • Rasmalai essence
  • 4 tbsp of milk
  • Pistachio slices

Step by step instructions

  • Add ghee to the a bowl and whisk a little
  • Next add all the above ingredients except pistachios 1 by 1 and make a soft dough
  • Now make small flat balls and roll it on the sliced pistachios to give the final look
  • Bake these rasmalai biscuits/ rasmalai cookies on a pre heated 160 degrees Celsius for 25 minutes or till it turn out light golden brown in color
